really hardy smelt fishermen eat them raw - but not being a really hardy
fisherman, and since I'm not too crazy about fish heads (some people like
them so skip over the "cut off their heads" part of the following):
Plan a big party - especially if you have LOTS of them - otherwise,
have less people - base amount of smelts to be eaten roughly on how many
large shrimp can you eat algorithm
take a sharp knife, cut off their heads and gut them (slit the underbelly
lengthwise) and, using your thumb, remove the guts (I don't like them either)
make a good dipping batter - you're favorite, whether its tempura batter, or
fried onions, fired veggies batter
dip them quickly into the batter then deep fry them about 6 at a time
when they are golden brown - only a few minutes - lift them out and drain on
brown bag or paper toweling
continue with the rest of them
serve with fried potatoes and/or onion rings
condiments: salt, vinegar, ketchup, cocktail sauce, tartar sauce
dig in and enjoy
by the way, these little buggers are delicacies and rich
